There is 2 part in the tag. The first one saying what the tag is (which amiibo), and the second with user data (the numbe of wolf link heart, smash brosh trainer data, ...). The first part is write once, so you cannot change it. The second can be written multiple time, that is how the console write the number of heart on it.
The main issue is there's different signals that fall under NFC. Amiibos are an older one, whereas your phone will write in a newer format. The Wii/Switch NFC can't read that format properly. What you CAN do is buy writable NFC tags I'm the correct format (NTAG215) and use your phone to program those to be amiibos.This will ensure that your modified files are properly registered by your Nintendo device.
