Best defense against cavalry for myself is put archers on a hill. and shield wall of infantry at the slopes. After the initial main charge, perhaps second, have infantry break/charge. With my own cavalry i have them in reserve and don't engage until after the enemy cavalry hits my infantry on most occassions.Now i needed to go much deeper into tactics. I always used to have about 50% infantry 30%arrows and 20%cav with the infantry in front the arrows a few meter behind them or on a hill behind them so they can shoot over the infantry. But i always see the bot enemies forming a circle with their infantry and the arrows inside.I've been using the Imperial & Vlandian pike guys mixed in with my regular infantry which seem to work quite well. No real reason to use infantry and Xbows are you bread and butter. The people telling you to use full sharpshooter are correct, just make sure to have about 10%of your army be fast moving strike infantry, Voulgier in the case of Vlandia, so you have a screening force to counter Cavalry charges.
