There are an incredible amount of options of different classes you can take, but the ones that I have taken are Basketball and Ice Skating. These classes are awesome and help students get exercise, meet people, and have fun while doing it. MCB 433 is a good class if you invest in it and are actually interested. Exams are really easy and straightforward. MCB 493 HMD is a good intro to metabolic disease. Kemper is a really good lecturer and really patient. I would say my favorites were MCB 320, 400, and 433. The "easier" ones for me were 314/461/493.
